Recipe – One-Pot Chickpea Stew

The snow is piling up where I live, which means I’ll be all about one-pot and slow cooker meals for the next few months! Stew meets casserole in this warm and cozy, vegan dish.

What you need:

  • One big pot
  • 1 tsp olive oil OR coconut oil
  • 1/2 white onion
  • 3 garlic cloves OR 1 clove of elephant garlic
  • 28 oz diced tomatoes
  • 1/4 cup coconut milk
  • 1 tsp sugar
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cinnamon
  • 1/4 tsp coriander
  • Cayenne pepper to taste
  • 15 oz chickpeas (garbanzo beans)
  • 1/2 cup uncooked rice

What to do:

  • Heat oil and saute onion and garlic until fragrant
  • Throw ALL the other ingredients in the pot
    • Bring to a boil
    • Cover and simmer for 15 mins (or until rice is cooked)
