The snow is piling up where I live, which means I’ll be all about one-pot and slow cooker meals for the next few months! Stew meets casserole in this warm and cozy, vegan dish.
What you need:
- One big pot
- 1 tsp olive oil OR coconut oil
- 1/2 white onion
- 3 garlic cloves OR 1 clove of elephant garlic
- 28 oz diced tomatoes
- 1/4 cup coconut milk
- 1 tsp sugar
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1/4 tsp coriander
- Cayenne pepper to taste
- 15 oz chickpeas (garbanzo beans)
- 1/2 cup uncooked rice
What to do:
- Heat oil and saute onion and garlic until fragrant
- Throw ALL the other ingredients in the pot
- Bring to a boil
- Cover and simmer for 15 mins (or until rice is cooked)
