I’m on a life-long quest to make eggs more interesting. This is my latest idea: Egg & Avocado Toast.
What you need:
- Frying pan
- 1 tsp butter or oil
- 1 slice of favourite bread
- 1 egg
- 1/2 avocado (sliced)
- Sriracha (optional)
What to do:
- Cut (or rip) a yoke sized hole out of the middle of the bread
- Heat butter or oil in pan
- Add bread to pan and crack egg into the hole
- Flip halfway through, cooking until both sides are evenly toasted and egg whites look cooked
- Top with avocado slices
- Drizzle sriracha (optional)

Note: For runny eggs, don’t break the yoke
