The other day, I was really lazy and got a pre-mixed bag of salad for a side with dinner. What I wasn’t expecting was to fall in love with the bagged salad – the secret ingredient? Crispy quinoa to top it! Turns out, this is really easy to make, so now, I’m obsessed. I throw it on top of salads, fruit, and yogurt. It adds a really satisfying light crunch to everything.
What you need:
- Pot
- Large plate
- Baking dish
- 1/2 cup cooked quinoa
- 1 cup water
- Olive oil (I used spray)
What to do:
- Cook quinoa according to package instructions – typically:
- Bring quinoa and water to a boil
- Cover and simmer for 15 minutes
- Spread quinoa on a large plate and refrigerate for about an hour
- Set oven to Broil
- Lightly grease the baking dish with olive oil
- Transfer quinoa to baking dish
- Broil for 15 minutes, tossing halfway through
Enjoy!
Tip: After my quinoa cooled completely, I sealed it up in mason jars to keep fresh.
