Recipe – Crispy Quinoa

The other day, I was really lazy and got a pre-mixed bag of salad for a side with dinner. What I wasn’t expecting was to fall in love with the bagged salad – the secret ingredient? Crispy quinoa to top it! Turns out, this is really easy to make, so now, I’m obsessed. I throw it on top of salads, fruit, and yogurt. It adds a really satisfying light crunch to everything.

What you need:

  • Pot
  • Large plate
  • Baking dish
  • 1/2 cup cooked quinoa
  • 1 cup water
  • Olive oil (I used spray)

What to do:

  1. Cook quinoa according to package instructions – typically:
    1. Bring quinoa and water to a boil
    2. Cover and simmer for 15 minutes
  2. Spread quinoa on a large plate and refrigerate for about an hour
  3. Set oven to Broil
  4. Lightly grease the baking dish with olive oil
  5. Transfer quinoa to baking dish
  6. Broil for 15 minutes, tossing halfway through

Enjoy!

Tip: After my quinoa cooled completely, I sealed it up in mason jars to keep fresh.
