Recipe – Peanut Butter Banana Bread

As I started collecting my ingredients for my usual Banana Bread, I got a sudden craving for a PB & Banana sandwich. So, I ran with it.

 

 

What you need:

  • Mixing Bowl
  • Baking dish (greased with coconut oil)
  • 1/2 cup melted coconut oil
  • 3/4 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 1 tsp baking soda
  • 1/4 natural peanut butter
  • 1/2 cup chopped or crushed peanuts
  • 2 medium ripe bananas

What to do:

  1. Preheat oven to 350 degrees
  2. In bowl, mix melted coconut oil and sugar
  3. Mix in eggs and vanilla
  4. Combine flour and baking soda separately and add to oil mixture
  5. Mix in peanut butter
  6. Fold in bananas and crushed peanuts
  7. Pour into greased pan
  8. Back for 30 minutes (or until toothpick or knife comes out clean)
