I’m always trying to think up recipes that can be made in bulk and frozen, because as much as I enjoy cooking, during the week, it’s much more of a chore than a past-time. If I can spend a Sunday afternoon cooking in bulk and freezing food for the upcoming week, I feel like I’m living my best life. With that in mind, my latest creation is vegetarian samosa-style wraps ๐
Kitchen Tools:
- Big pot
- Saucepan
- Big bowl
- Potato masher
- Baking sheet/pan
Ingredients:
- 1 lb potatoes, chopped and washed
- 2 big carrots, chopped and washed
- 1 cup of frozen peas
- 1 tbs coconut oil
- 1 small onion, chopped
- 3 garlic cloves (or to taste), minced
- 1 tbs curry powder
- 2 tsp coriander
- 2 tsp garlic powder
- 1 tsp red pepper flakes (or to taste)
- Salt and pepper to taste
- 6 big tortillas
Instructions:
- Boil potatoes, carrots and peas
- Meanwhile, in pan, heat oil and saute onion and garlic until fragrant
- In pan, mix in curry, coriander, garlic powder, red pepper flakes, salt and pepper
- Transfer onion mixture to a big bowl
- Once potatoes and carrots are soft, drain and add to onion mixture
- Mix thoroughly and mash to a chunky consistency
- Scoop about half a cup of potato/onion mixture onto each tortilla and wrap them up
The wraps can now be refrigerated or frozen for later, or baked immediately.
To bake:

- Thaw completely (if frozen)
- Bake at 425 degrees for 10 minutes (until slightly browned)
In a rush? These can also be microwaved or even eaten cold ๐
