Recipe – Chocolate Chip Banana Bread

I will not eat a ripe banana raw. I like them still a little green, so as soon as they start to spot, they get set aside. Once they’re good and mushy they go straight into the freezer, and stay there until I’m ready to thaw them and make banana bread. Here’s my recipe for a chocolate chip loaf.

What you need:

  • Baking dish
  • 1/2 cup melted coconut oil
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 cup sour cream (this makes the loaf nice and rich)
  • 2 mushy bananas
  • Chocolate chips (about 1/2 cup or as much as you want!)

What to do:

  1. Preheat oven to 350 degrees
  2. Mix the coconut oil (or butter) and sugar
  3. Add the eggs and vanilla
  4. Combine the flour and baking soda separately, then add to egg mixture
  5. Stir until well blended
  6. Mash in bananas
  7. Fold in chocolate chips
  8. Spread evenly in greased dish
  9. Bake for 45 minutes
